Cashew & Lemon energy ball

Lately I've been playing with various recipes for energy  balls/bars/cookies.  It's nice to have a good snack for that 3pm munchie need when I'm sitting at my desk at work.

So, this energy ball/bar has a nice flavor profile that is different from most of those I've seen out there.  The lemon is what makes it work.  This is based on a recipe from a book called: Clean Eats by Alejandro Junger, MD.


Cashew and Lemon energy ball

  • 4 cups raw cashews
  • 1/4 cup pitted dates, soft
  • 1 teaspoon vanilla
  • 3 tablespoons coconut oil
  • 1 tablespoon lemon zest (more or less to your taste)
  • 1/4 cup coconut (flakes or shredded) not sweetened
  • sea salt - pinch
In a food processor, blend all the ingredients until nuts and dates are finely ground.  If mixture isn't holding a ball shape (or bar shape), mix in a bit more coconut oil.  It maybe a bit sticky.  Place into the fridge and they will hold their shape nicely.
